sig's herb stuffed potatoes
- 16 medium unpeeled potatoes
- 2 anchovies
- 1 bunch each basil and flat parsley
- 1 large clove garlic
- 1 tbsp olive oil
- 1 good pinch salt
- preheat oven to 180C.
- Boil potatoes unpeeled until cooked.
- Set aside to slightly cool
- Cut potatoes about a third lengthways and scoop out a well in bigger part.
- In food processor blend all other ingredients and the scooped out potatoes to a paste.
- fill the paste into wells add the smaller third on top to make a lid ,tie together with chives.
- Bake in oven until heated through.
- Serve with drizzles of more olive oil or melted butter
