sig's herb stuffed potatoes

  1. preheat oven to 180C.
  2. Boil potatoes unpeeled until cooked.
  3. Set aside to slightly cool
  4. Cut potatoes about a third lengthways and scoop out a well in bigger part.
  5. In food processor blend all other ingredients and the scooped out potatoes to a paste.
  6. fill the paste into wells add the smaller third on top to make a lid ,tie together with chives.
  7. Bake in oven until heated through.
  8. Serve with drizzles of more olive oil or melted butter
