Miso stick chicken wings
- 1 dozen chicken wings
- 2 tbsp canola oil
- 1/3 cup shiro miso
- 2 tsp fresh lime
- 1 tsp finely grated ginger
- 1 tsp asian fish sauce
- 1 thai bird chile
- 3 tbsp turbanado or light brown sugar
- 1 bunch cilantro
- 1 lime
- 2 pinch salt pepper
- preheat 400
- toss in large bowl with oil and seasoning with salt pepper
- transfer to rack over baking sheet
- bake for 40 min turning half way until golden brown
- in a small pan combined the rest of the ingredients except the cilantro and lime
- add 3tbs of water and cook over low heat whisking frequently until sugar is dissolved and glaze is smooth and slightly thickened
- brush the glaze over wings and bake 10 min longer until golden brown and sticky
- garnish with cilantro and lime
- serve with cherry-scented pinot (09)
