Low-Fat Soup
- 1 lb. ground turkey
- 1 Tbsp. oil (Crisco)
- 1 c. thinly sliced carrots
- 1/2 c. chopped onion
- 1/2 c. thinly sliced celery
- 2 Tbsp. flour
- 1 can beef broth
- 1 (14 oz.) can tomatoes, chopped with juice
- 1 c. water
- 1 tsp. Worcestershire
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. frozen green peas
- Brown meat over medium heat for 5 minutes.
- Using slotted spoon, transfer to plate and set aside.
- Add oil in saucepan along with vegetables.
- Cook until soft.
- Stir in flour; stir 1 more minute.
- Gradually add beef broth, tomatoes with juice, water, Worcestershire, salt and pepper.
- Stir in ground turkey.
- Bring to boil.
- Reduce heat and simmer for 25 minutes.
- Stir in 1/2 cup frozen green peas; cook 5 minutes more.
