Khara Masala Balti Chicken
- 14 teaspoon mustard seeds
- 14 teaspoon fennel seed
- 14 teaspoon onion seeds
- 12 teaspoon cumin seed
- 14 teaspoon fenugreek seeds
- 1 teaspoon salt
- 1 teaspoon ginger
- 3 garlic cloves, sliced
- 4 tablespoons corn oil
- 1 medium onion, sliced
- 1 12 lbs boneless skinless chicken, chopped
- 1 sliced fresh tomato
- 1 tablespoon fresh coriander, chopped
- Mix seeds, salt ginger and garlic in a small bowl (i usually double the ginger).
- Heat the oil in a preheated wok.
- When oil is hot, add spices.
- Add the onion to wok and stir-fry 5-7 minutes.
- Add tomato and chicken to wok and cook over medium heat about 7 minutes or until chicken is cooked.
- Stir mixture over heat for a further 3-5 minutes, then garnish with coriander.
