Foil-Pack Oriental Chicken Dinner
- 1-1/2 cups instant white rice, uncooked
- 1-1/2 cups warm water
- 1/4 cup Kraft Chicken'N Rib BBQ Sauce
- 2 Tbsp. Kraft Peanut Butter
- 1 tsp. soy sauce
- 4 small boneless skinless chicken breasts (1 lb./450 g), about 1/2 inch thick
- 3 cups frozen Asian mixed vegetables (snow peas, carrots, baby corn, broccoli, mushrooms, green beans and red peppers)
- Heat oven to 400F.
- Mix rice and water in small bowl; mix barbecue sauce, peanut butter and soy sauce in another bowl.
- Spoon rice onto centre of each of 4 large sheets heavy-duty foil.
- Top with chicken, vegetables and barbecue sauce mixture.
- Bring up foil sides.
- Double fold top and both ends to seal each packet, leaving room for heat circulation inside.
- Place in 15x10x3/4-inch pan.
- Bake 30 to 35 min.
- or until chicken is done (170 degrees F).
- Remove packets from oven; let stand 5 min.
- Cut slits in foil to release steam before opening each packet.
