Turkey Sausage, Artichoke, and Mushroom Mini-Pizza
- 1 lb whole wheat pizza dough
- 34 lb uncooked turkey sausage, spicy and sliced on the bias
- 2 garlic cloves, minced
- 12 cup marinara sauce
- 1 cup olive oil
- 12 cup fresh cremini mushroom, thinly sliced
- 1 (15 ounce) can artichoke hearts, water drained and cut in bite-sized pieces
- 14 cup asiago cheese, freshly shaved
- 14 cup romano cheese, freshly grated
- 14 cup ricotta cheese, fresh
- 14 cup fresh basil leaf, chiffonade
- fresh cracked pepper
- sea salt
- Mix together the Garlic and Olive Oil.
- Separate the pizza dough into 4-6 sections.
- Roll and stretch out into the pizza shapes of your choice.
- Brush with the olive oil and garlic mixture.
- Season with a sprinkle of salt and pepper.
- Place on a Pizza Stone or a large pizza baking sheet and bake in a 425 degree oven for about 5-6 minutes.
- Do not let the pizza crust brown, but it does need to be cooked through.
- Spread each crust with a scoop of marinara sauce, top with the mushrooms, sausage slices, artichoke pieces, cheeses, and basil.
- If desired season one more time with a sprinkle of salt and fresh cracked pepper.
- Bake in 425 degree oven for about 15 minutes, or until cheese is gooey and crust is crisp and golden.
