Fruit Salad With Turkey Broth Couscous

  1. Toast the walnut halves in a 350 degree F. oven for about 10 minutes.
  2. Then coarsely chop them.
  3. Bring the turkey broth to a boil.
  4. Remove from heat, and add the couscous.
  5. Cover and allow to stand 5 minutes.
  6. Meanwhile, prepare the fruit and celery as directed and combine in a large bowl.
  7. Toss gently to combine.
  8. Fluff up the couscous with a fork and add to the fruit mixture.
  9. Add the ginger, curry, honey and salt.
  10. Toss the mixture again to combine all ingredients.
