Mandarin Orange And Cashew Chicken
- 1 (11 oz.) can mandarin orange segments
- 1/4 c. stir-fry sauce
- 3 Tbsp. vegetable oil, divided
- 2 boneless, skinless chicken breasts, cut into strips
- 1/3 c. roasted cashews
- 1 clove garlic, minced
- 1 medium onion, sliced
- 1/2 lb. fresh snow peas
- Drain mandarin oranges; reserve 2 tablespoons syrup.
- Blend reserved syrup and stir-fry sauce.
- Heat 2 tablespoons oil in a wok or large skillet over high heat.
- Add chicken, cashews and garlic.
- Stir-fry 3 minutes; remove.
- Heat remaining oil in same pan.
- Add onion and snow peas; stir-fry 3 minutes.
- Add chicken mixture and stir-fry sauce mixture to onion-snow peas mixture; cook and stir to coat all ingredients with sauce.
- Remove from heat; stir in oranges.
