Mandarin Orange And Cashew Chicken

  1. Drain mandarin oranges; reserve 2 tablespoons syrup.
  2. Blend reserved syrup and stir-fry sauce.
  3. Heat 2 tablespoons oil in a wok or large skillet over high heat.
  4. Add chicken, cashews and garlic.
  5. Stir-fry 3 minutes; remove.
  6. Heat remaining oil in same pan.
  7. Add onion and snow peas; stir-fry 3 minutes.
  8. Add chicken mixture and stir-fry sauce mixture to onion-snow peas mixture; cook and stir to coat all ingredients with sauce.
  9. Remove from heat; stir in oranges.
