Classic sicilian cannoli

  1. In a medium bowl, combine ricotta, sugar, chocolate, cinnamon and vanilla.
  2. Mix well.
  3. Fold in whipped cream.
  4. Place filling into a pastry bag and pipe filling into cannoli shells.
  5. Sprinkle nuts on ends.
  6. Dust filled shells lightly with powdered sugar.
  7. Alternative Filling: Add 3 tbsp of cocoa and 1 tsp grated fresh orange peel.
  8. Dip shell edges into melted chocolate before filling and garnish ends with chocolate sprinkles.
  9. Makes 24 cannoli
