Celery Casserole
- 3 c. diced celery
- 1/4 c. slivered almonds
- 1/2 c. water chestnuts, sliced
- 1 (4 oz.) can drained sliced mushrooms
- 1/4 c. plus 1 Tbsp. butter
- 3 Tbsp. flour
- 1 c. chicken broth
- 3/4 c. grated Parmesan cheese
- 1/2 c. soft bread crumbs
- 3 Tbsp. melted butter
- 3/4 c. half and half
- Cook celery in small amount boiling water until just tender (about 5 minutes).
- Drain.
- Combine celery, almonds, chestnuts and mushrooms.
- Mix well.
- Pour into greased baking dish.
- Melt butter; blend in flour.
- Cook 1 minute.
- Add broth and half and half.
- Cook until thickened.
- Pour over celery.
- Combine cheese and bread crumbs.
- Sprinkle over casserole.
- Top with melted butter.
- Bake 25 minutes at 350u0b0.
