Sugar Snap Peas
- 1/2 cup chopped peeled fresh peaches
- 1 tablespoon cider vinegar
- 1 tablespoon chopped yellow onion
- 1 tablespoon golden raisins
- 1/2 teaspoon grated peeled fresh ginger
- 1 teaspoon cane syrup
- 1/2 teaspoon grated lemon zest
- 1 garlic clove, minced
- 1/4 teaspoon mustard seeds
- 1/8 teaspoon red pepper flakes
- Pinch of ground cinnamon
- Pinch of ground cloves
- Pinch of ground allspice
- 4 cups sugar snap peas (1 pound), trimmed
- Combine the peaches, vinegar, onion, raisins, ginger, cane syrup, lemon zest, garlic, mustard seeds, red pepper flakes, cinnamon, cloves, and allspice in a large bowl.
- Cover and microwave on high for 1 minute.
- Add the peas, cover, and cook on high for 2 minutes or until the peas are tender.
