Asian Eggplant
- 1/2 each eggplant
- 2 each red fresno chilis
- 1 tbsp miso
- 1/4 cup sake
- 2 each green onions
- 1 tbsp ginger
- Stir fry eggplant and chili's in a bit of high temp oil.
- I use peanut oil.
- Mix sake and miso.
- Add the sake/miso mixture to the eggplant and remove from heat.
- Add the sesame seeds and 2 chopped green onions.
- Stir for a few min.
- and serve.
