Seared Peach Pancakes

  1. Slice fruit crosswise about 1/4 inch thick, cutting around pit to form rings.
  2. For apples, core and slice crosswise; set aside.
  3. In a bowl compine flour, sugar, and baking soda.
  4. Make well in center of flour mixture; set aside.
  5. In another bowl whisk togther eggs, milk, melted butter, and vinegar.
  6. Add egg mixture to flour mixture.
  7. Stir until moistened.
  8. Add about 1 teaspoons butter to a hot, large nonstick skillet or griddle.
  9. Place a peach slice on hot skillet.
  10. Pour or spread a scant 1/4 cup batter over peach slice.
  11. Cook over medium heat about 2 minutes on each side until pancakes are golden brown, turning when pancakes have bubbly surfaces and edges are slightly dry.
  12. Repeat with remaining batter and peach slices; add butter to skillet as needed.
  13. Serve warm with maple syrup.
