Buffalo Fries

  2. Preheat oven to 475 degrees F. Slice each potato in half lengthwise, then each half into 6 wedges.
  3. Place in a bowl and toss with cooking oil.
  4. Spread in a single layer on a baking sheet lined with parchment or Silpat.
  5. Sprinkle with seasoning salt.
  6. Roast for 15 minutes, then turn fries, sprinkle with more seasoning salt, and roast for an additional 15 minutes.

  8. Set oven to broil.
  9. Carefully place hot fries onto an oven safe platter.
  10. Drizzle with buffalo sauce, then sprinkle with cheeses.
  11. Broil until cheese is melted and just begins to bubble.
  12. Remove from the oven.

  14. Dice green onions and sprinkle over the top of the fries.
  15. Serve with blue cheese dressing on the side.
