VELVEETA LIGHT Cheesy Chicken & Broccoli Macaroni
- 4 boneless skinless chicken breast halves (about 1-1/4 lb.), cut into chunks
- 1 can (14-1/2 oz.) chicken broth
- 2 cups (8 oz.) elbow macaroni, uncooked
- 3/4 lb. (12 oz.) VELVEETA LIGHT Reduced Fat Pasteurized Prepared Cheese Product, cut up
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed
- Spray large skillet with no stick cooking spray.
- Add chicken; cook and stir 2 minutes or until no longer pink.
- Stir in broth.
- Bring to boil.
- Stir in macaroni.
- Reduce heat to medium low; cover with tight fitting lid.
- Simmer 8 to 10 minutes or until macaroni is tender and chicken is cooked through.
- Add VELVEETA LIGHT and broccoli; stir until VELVEETA LIGHT is melted.
