Cinnamon Delights Spice Cake

  1. Grease and lightly flour 2 (9x13-inch) baking pans (or 1 pan for trial recipe.)
  2. Combine dry ingredients and spices in a large bowl; set aside.
  3. Mix 16 oz.
  4. DELIGHTS (or 8 oz.
  5. for trial recipe), milk, eggs and vanilla in a 2 quart measure.
  6. Mix butter and dry ingredients with electric mixer on low speed until combined.
  7. Beat on medium speed until mixture forms pebble-sized pieces.
  8. Add 1/3 of the milk mixture; beat on low speed until smooth.
  9. Add another 1/3 of the milk mixture; beat on medium speed until incorporated.
  10. Add remaining milk mixture; beat until smooth.
  11. Add sugar; blend 30 seconds.
  12. Pour batter into 2 prepared cake pans.
  13. Bake on middle rack of a 350 degrees F standard oven 40 min.
  14. or until toothpick inserted in center comes out clean.
  15. Cool in pan 5 min.
  16. Run knife around the pan to loosen cake.
  17. Invert onto cooling rack; cool completely.
  18. Mix 1.5 lbs.
  19. cream cheese and 1.5 lbs.
  20. Delights (or 12 oz.
  21. of each for trial recipe) until blended.
  22. Spread evenly onto 2 cakes.
