Basil Pesto and Fresh Tomato Grilled Cheese
- 2 slices whole wheat bread or any sandwich bread
- 2 tablespoons basil pesto basil
- 1/4 cup swiss cheese shredded, or sliced
- 1 small tomatoes sliced
- 1 x salt and black pepper to taste
- 1 tablespoon butter softened, or olive oil
- Preheat a medium non-stick skillet over medium or medium-low heat.
- Spread two slices of bread with equal amounts of basil pesto, and top one slice with Swiss cheese.
- Arrange the tomato slices over the cheese.
- Top with the remaining slices of bread to make a sandwich.
- Add butter or oil in the preheated pan until butter melts or oil becomes hot.
- Place the sandwiches in the hot pan and grill for about 4 minutes, pressing down occasionally, until crispy and golden.
- Flip and grill for another 4 minutes, or until crispy and golden-brown.
- Serve warm with tomato soup if desired.
