Baked Truffle Treasures
- 1 cup sugar
- 1/4 cup butter melted
- 2 large eggs beaten
- 3 tablespoons amaretto liqueur
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 cups cereal almond delight, crushed to one cup
- 1/2 cup cocoa powder unsweetened
- 1/2 cup coconut, shredded (desiccated)
- 1/2 cup powdered sugar
- Preheat oven to 350F (180C).
- In a medium bowl, beat sugar and butter.
- Add eggs, amaretto, honey and vanilla extract, stirring until well combined.
- Stir in cereal, cocoa and coconut.
- Pour into an ungreased 2-quart casserole and bake for 30 minutes.
- Remove from oven and stir immediately until well blended.
- Let cool to room temperature.
- Shape level tablespoons of mixture into 1 1/2-inch balls.
- Roll each ball in powdered sugar.
- Store in an airtight container.
