Molded Cantaloupe Cream Recipe
- 1 pkg. orange Jello
- 3/4 c. cool water
- 1 lg. cantaloupe
- 1/2 c. sugar
- 1 c. whipping cream
- 1 3/4 c. orange juice
- 2 Packages Knox gelatin
- 1 c. boiling water
- 1/4 teaspoon ginger
- Make 1 c. of balls and scoop out remaining pcs for the rest of salad.
- Mix orange Jello with ginger.
- Add in boiling water and dissolve.
- Add in cold water and cold till syrupy.
- Add in cantaloupe balls and put in 2 qt mold.
- Chill.
- Soften gelatin in 3/4 c. orange juice.
- Heat over low heat along with sugar till gelatin is dissolved.
- Add in remaining orange juice and cantaloupe pcs.
- Place in blender and blend till smooth.
- Cold till syrupy.
- Whip cream till stiff.
- Fold into cantaloupe mix.
- Pour over orange layer in mold.
- Refrigerateseveral hrs or possibly overnight.
- Unmold before serving.
