Jamaican Banana Fritters

  1. Peel and mash the ripe bananas in a bowl
  2. Stir flour, baking powder and salt in the mixture
  3. Beat in egg, sugar, vanilla, cinnamon and nutmeg with a wire wisk and add to the batter
  4. The batter should be the consistency of a pancake mix if too thick add milk and if too light add flour
  5. Add oil in a heavy Frying pan 3 inches to coat the base of the pan and heat 185C/360F with medium flame
  6. Drop spoonfuls of the banana fritters batter into the hot oiled frying pan
  7. Flip when you see the edges start getting brown and golden until brown and golden on both sides
  8. Drain excess oil from the fritters on kitchen paper
  9. Optional sprinkle icing sugar or add cherries on top
  10. Serve hot
