Jamaican Banana Fritters
- 3 ripe bananas
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/2 tsp ground Cinnamon
- 1 egg
- 1/3 cup milk
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/3 cup flour
- 1 coconut oil
- Peel and mash the ripe bananas in a bowl
- Stir flour, baking powder and salt in the mixture
- Beat in egg, sugar, vanilla, cinnamon and nutmeg with a wire wisk and add to the batter
- The batter should be the consistency of a pancake mix if too thick add milk and if too light add flour
- Add oil in a heavy Frying pan 3 inches to coat the base of the pan and heat 185C/360F with medium flame
- Drop spoonfuls of the banana fritters batter into the hot oiled frying pan
- Flip when you see the edges start getting brown and golden until brown and golden on both sides
- Drain excess oil from the fritters on kitchen paper
- Optional sprinkle icing sugar or add cherries on top
- Serve hot
