Easy Skillet Lasagna Recipe
- 1 12 tablespoons vegetable oil
- 1 large onion, chopped
- 1 cup mushroom, chopped
- 2 garlic cloves, minced
- 1 (14 1/2 ounce) can diced tomatoes, drained (I use petite)
- 1 cup tomato sauce (I use Ragu Chunky Tomato Garlic and Onion)
- 14 teaspoon black pepper
- 1 teaspoon salt
- 1 cup skim milk ricotta cheese
- 12 cup part-skim mozzarella cheese
- 3 tablespoons parmesan cheese
- 6 ounces ziti pasta (fully cooked)
- 2 tablespoons parsley (dried or fresh)
- Heat oil in large nonstick skillet over medium high heat.
- Add onions and cook until softened, about 4 minutes.
- Add garlic and mushrooms and cook until garlic is fragrent, about one minute.
- Add tomatoes, tomato sauce, salt and pepper.
- Cook mixture until it thickens up a bit, around 5 minutes.
- Add noodles to skillet and stir well.
- Add scoops of ricotta cheese over noodles; add in mozzarella and Parmesan.
- Stir in parsley.
- Cook two minutes, or until mixture is thick.
