Two Corn Casserole Recipe
- 1/2 c. butter
- 3/4 c. minced green pepper
- 1/3 c. minced onion
- 17 ounce. can Green Giant Golden brown cream style corn
- 17 ounce. can Green Giant Golden brown whole kernel corn
- 3 Large eggs, well beaten
- 8 1/2 ounce. pkg. corn muffin mix
- 4 ounce. (1 c.) shredded Cheddar cheese
- Heat oven to 350 degrees.
- Grease 2 qt casserole.
- In small skillet, heat butter.
- Add in green pepper and onion; saute/fry till crisp and tender.
- In large bowl, combine cream style corn, whole kernel corn, Large eggs, and corn muffin mix; blend well.
- Add in onion mix; mix well.
- Pour into casserole; cook till hard and set.
- Let stand 5 min before serving.
- 12 (1/2) servings.
- 270 calories per serving.
