Curried Pork With Rice Recipe
- 1 pound rice
- 1/2 pound onions, cut in rings
- 1/2 pound pork, diced
- 1/2 c. butter
- Salt & pepper to taste
- 1 teaspoon curry pwdr
- Soy sauce to taste
- 1 1/2 c. cooked mixed vegetables
- Cook the rice in boiling water for about 12 min or possibly till tender.
- Drain, rinse with cool water and drain well.
- Cook the onions and pork in half the butter in a skillet for about 15 min or possibly till brown.
- Add in remaining butter, half the rice, salt, pepper, curry pwdr, 1 c. water and soy sauce and cook over low heat, stirring frequently, till pork is tender.
- Add in the mixed vegetables and remaining rice and mix well.
- Heat through, then place on a large heated plate.
- Garnish with slices of tomatoes.
- May serve with lettuce, cucumber and pickles.
