Stewed String Beans-Chinese
- 4 slices bacon
- 2 scallions, shredded
- 1 teaspoon fresh ginger, shredded
- 1 tablespoon soy sauce
- 1 cup water
- 34 lb string bean, cut in 1-inch lengths
- salt
- In a wok, cook bacon until crisp and set aside.
- Stir scallion and ginger in the bacon fat.
- Add soy sauce and water and bring to a boil.
- Add beans and mix well.
- Cover and simmer over low heat until liquid is reduced and beans are tender, about 30 minutes.
- Serve hot, garnished with crumbled bacon.
