Stewed String Beans-Chinese

  1. In a wok, cook bacon until crisp and set aside.
  2. Stir scallion and ginger in the bacon fat.
  3. Add soy sauce and water and bring to a boil.
  4. Add beans and mix well.
  5. Cover and simmer over low heat until liquid is reduced and beans are tender, about 30 minutes.
  6. Serve hot, garnished with crumbled bacon.
