Rainbow Chopped Salad
- 8 cups lightly packed chopped romaine lettuce
- 1 avocado, chopped Target 10 ea For $10.00 thru 02/06
- 2 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- 8 slices bacon, cooked, crumbled
- 1 cup frozen corn, thawed
- 1 cup rinsed canned no-salt-added black beans
- 2 cups cherry tomatoes, quartered
- 1 lb. (450 g) boneless skinless chicken breasts, cooked, cut into 1/2-inch pieces
- 1/2 cup slivered red onions
- 1/2 cup Kraft Rancher's Choice Dressing
- Place lettuce in large serving bowl.
- Toss avocados with lime juice.
- Arrange, along with all remaining ingredients except dressing, in rows over lettuce.
- Add dressing; mix lightly.
