Crispy Coated Chipotle-Fish with Avocado Salsa
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- 1 tsp. chipotle chile pepper powder
- 4 tilapia fillets (1 lb./450 g) Walmart Supercenter 1 pkg For $10.98 thru 02/14
- 2 cups chopped English cucumber
- 1 avocado, chopped Whole Foods 5 ea For $5.00 thru 02/09
- 1/4 cup finely chopped red onions
- 2 Tbsp. chopped fresh cilantro
- 1 clove garlic, minced
- 1/4 cup Kraft Italian Zesty Lime Dressing
- 2-2/3 cups hot cooked long-grain brown rice
- 1 lime, cut into 4 wedges
- Heat oven to 400 degrees F.
- Cover baking sheet with parchment.
- Combine coating mix and chile powder in shaker bag.
- Use to coat fish as directed on package; place on prepared baking sheet.
- Bake 10 min.
- or until fish flakes easily with fork.
- Meanwhile, combine all remaining ingredients except rice and lime wedges.
- Serve fish with rice; top with avocado salsa.
