Stone Ground Speckled Grits

  1. In a heavy saucepan set over moderate heat combine milk and grits, bring to a boil, stirring with a wooden spoon and simmer, stirring, for 20 minutes.
  2. Remove from heat, stir in butter, Gorgonzola, creme fraiche and chives.
