Quinoa Salad

  1. Bring the water to a boil in a saucepan.
  2. Add quinoa; cover, reduce heat to low and until for 12-15 minutes or until water is absorbed.
  3. Remove from heat; transfer to a large bowl and set aside to cool.
  4. In a jar or bowl whisk together dressing ingredients (olive oil - garlic, using the 2 tablespoons parsley), season with salt and pepper if desired.
  5. Set aside.
  6. Add cumcumber, tomato, mint and the remaining 1/2 cup parsley.
  7. Toss.
  8. Place lettuce in a large salad bowl, add salad ingredients and dressing and toss.
