Tzatziki Sauce Recipe

  1. Grate the cucumber on the large holes of a box grater.
  2. Run a knife over the grated cucumber until its fine in texture, but not totally minced.
  3. Mound the cucumber in the center of a clean kitchen towel, then twist the towel to squeeze out as much moisture as you can.
  4. Place the cucumber in a medium bowl.
  5. Add the yogurt, herbs, lemon juice, garlic, and cumin, season with salt and pepper, and mix well.
  6. Refrigerate for 1 hour or overnight to meld the flavors before serving.
