Seafood Satay Medley
- 1/4 cup olive oil
- 500g green prawns, peeled and de-veined Safeway 1 lb For $8.99 thru 02/09
- 300g calamari, scored diagonally, cut into 4cm squares
- 200g scallops, cleaned
- 1 red capsicum, sliced
- 4 spring onions, cut into 3cm lengths
- 1 clove garlic, crushed
- 1 teaspoon brown sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/3 cup KRAFT Smooth Peanut Butter
- 400ml can light coconut cream
- juice of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- steamed rice, to serve
- lime wedges, to garnish Safeway 3 ct For $1.00 thru 02/09
- Heat 2 tablespoons of oil in a wok over high heat.
- Stir-fry prawns, calamari and scallops for 2 minutes.
- Remove and set aside.
- Heat remaining oil in wok and stir-fry capsicum, spring onions, garlic, brown sugar, paprika and cumin for 2 minutes.
- Stir in the peanut butter until smooth, then stir in the coconut cream.
- Return the seafood to pan along with the lemon juice and stir until heated through.
- Serve immediately with rice and lime wedges.
