Easy Pumpkin Fudge

  1. Line an 8 x 8 inch* pan with foil, leaving foil longer than the pan.
  2. Spray foil with Pam cooking spray.
  3. In heavy pan, combine sugar, evaporated milk, pumpkin, butter, salt, and pumpkin pie spice.
  4. Stir constantly over medium heat, bring the mixture to a boil, and let boil 12 minute ( I use my mixer on low to stir.
  5. ).
  6. Remove from heat; stir in vanilla, marshmallow and vanilla chips till smooth.
  7. Poor into pan and cover and chill till set.
  8. Dump set up candy onto cutting board.
  9. Lift off foil and cut into serving pieces.
  10. *Double the recipe: use a 9 x 13 inch baking pan.
