Veggie Chili
- 10 lbs Spanish onions, diced
- 10 lbs red peppers
- 10 lbs green peppers
- 10 lbs kidney beans, cooked
- 5 lbs celery, diced
- 5 lbs carrots, diced
- 5 lbs red bulgur wheat
- 40 lbs tomatoes, strips
- 20 lbs tomato puree
- 8 cups tamari
- 2 cups lime juice
- 1 cup canola oil
- 1 cup olive oil
- 2 cups garlic
- 2 cups chili powder
- 2 cups oregano
- 2 cups cumin
- 6 bunches cilantro
- 8 ounces chipotle peppers
- 8 jalapeno peppers
- 2 tablespoons crushed red pepper flakes
- 2 gallons water
- Saute all veggies in oil.
- Add wheat, tomatoes, tomatoes and water, bring to a boil.
- Add all spices, cooked beans and simmer for one hour.
- Add cilantro and lime juice.
