Mardi Gras Oyster Soup
- 1 quart clam juice
- 1 12 lbs oysters, liquor reserved (fresh or canned)
- 23 cup chopped onion
- 12 cup dry white wine
- 2 tablespoons cornstarch
- salt and pepper
- chopped chives (to garnish)
- Combine clam juice, reserved oyster liquor and onion in slow cooker.
- Cook on high 2-3 hours.
- Combine wine and cornstarch.
- Stir in oysters, wine and cornstarch; cover and cook 15 minutes.
- Season to taste with salt and pepper.
