Garlic Cheddar Muffins
- 1 1/4 cups blanched almond flour
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 2 tablespoons olive oil
- 2 cups firmly packed grated cheddar cheese (8 ounces)
- 3 medium cloves garlic, pressed
- Preheat the oven to 350F.
- Line 9 muffin cups with paper liners.
- In a large bowl, combine the almond flour, salt, and baking soda.
- In a medium bowl, whisk together the eggs and olive oil.
- Stir the wet ingredients into the almond flour mixture with a large spoon until thoroughly combined, then stir in the cheese and garlic.
- Scoop 1/4 cup of batter into each prepared muffin cup.
- Bake for 18 to 23 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs attached.
- Let the muffins cool in the pan for 15 minutes, then serve.
