Pear Tortilla
- 1 tortilla, white flower
- 1 pear, ripe
- 1 teaspoon butter, cold
- 1 tablespoon sugar
- 2 teaspoons apricot jam
- Preheat oven to 400*.
- Lightly spray tortilla and place oil-side down on baking sheet.
- Peel, core, and thinly slice pear into about 20 slices.
- Fan slices out to cover tortilla in a radiating pattern.
- Cut cold butter into 6 or 8 pieces and arrange evenly over pear slices.
- Sprinkle sugar and nutmeg over the top.
- Bake about 15 minutes, until pear is tender and sugar is bubbling.
- Stir jam to soften and spread lightly over the tart, using a pastry brush or the back of the spoon.
- Cut tart into wedges by pressing straight down with a knife (dont drag knife through it).
- Serve warm.
