5 Pepper Chicken And Rice Casserole
- 3 tbsp Tex Mex seasoning. ( equal parts of cumin, garlic powder, onion powder, paprika, chili powder, granulated jalapeno powder, white pepper and garlic salt)
- 1 Cubed chicken breast
- 1 each Jalapeno, Plabano , Anaheim, Red Bell and a can of Ortega chiles chopped
- 1 can Cream of chicken soup
- 1 can Chicken broth
- 2 cup Minute rice
- 2 cup Pepper jack cheese, cubed
- 2 tbsp Cilantro chopped
- 2 tbsp Olive oil
- 1 Leeks chopped
- First is to season the chicken with the tex mex seasoning.
- Saute in olive oil until cooked through.
- Next, add chopped peppers and leeks to chicken.
- Saute about 3-5 minutes.
- Next, in a large casserole dish combine all the remaining ingredients EXCEPT the cilantro .
- Mix to combine .
- Add the chicken and peppers to the casserole dish mix well, cover with aluminum foil.
- Bake at 350 for 30 minutes.
- Remove from the oven and garnish with the cilantro.
