Red Raspberry Mousse Dessert
- 2 (3 ounce) packagesraspberry gelatin
- 1 34 cups boiling water
- 2 (10 ounce) packages frozen sweetened raspberries, thawed
- 2 cups heavy whipping cream, whipped
- 23 ladyfingers
- of fresh mint
- raspberries
- additional whipped cream
- In a large bowl, dissolve gelatin in boiling water.
- Stir in raspberrier.
- Refrigerate until partially thickened.
- Fold in whipped cream.
- Arrange the ladyfingers with rounded side out around the sides of an ungreased 9-in.
- spring form pan.
- Carefully spoon raspberry mixture into pan.
- Cover and refrigerate until firm.
- Garnish with mint, raspberries and whipped cream if desired.
