Possom And Sweet Potatoes Recipe
- 1 med. sized possom
- 5 gallons water
- 2 handfuls hardwood ashes
- 1/2 c. salt
- 1/2 dozen med. sized sweet potatoes
- Pepperidge Farm stuffing mix
- Feed lettuce and table scraps to caged possom for 5 days.
- Break his neck by stepping on neck and yanking tail till neck snaps.
- Boil 5 gallons of water and put possom and ashes in water.
- Scrape off hair with knife, don't skin!
- Soak possom overnight in cool water and salt.
- Stuff possom with dressing.
- Place in a roaster with a little water.
- Cook 350 degrees for 1 1/2 hrs.
- Add in sweet potatoes to roasting pot, slice as you would a pig and serve.
