Paleo Strawberry Cupcakes
- 1/2 cups Coconut Flour
- 1/4 teaspoons Celtic Sea Salt
- 1/2 teaspoons Baking Soda
- 5 whole Eggs
- 1/2 cups Honey
- 1 Tablespoon Vanilla Extract
- 1/2 cups Finely Chopped Strawberries
- Preheat oven to 350 degrees F.
- In a food processor, pulse together coconut flour, salt, and baking soda.
- Pulse in eggs, honey, and vanilla until thoroughly combined.
- Remove blade from food processor and stir in strawberries by hand.
- Line 9 cups in a standard size muffin pan with paper liners and scoop 1/4 cup batter into each.
- Bake at 350 degrees F for 24-26 minutes.
- Cool and serve with your favorite buttercream frosting.
