Thai Chicken Satays Recipe

  2. Combine 1 c. yogurt, coconut lowfat milk, curry, lemon juice, ginger, salt, pepper and garlic in medium bowl; reserve 1/3 c. marinade.
  3. Add in chicken to remaining marinade; cover and chill at least 8 hrs.

  5. Soak 12 (10-inch) wooden skewers in water 30 min; set aside.

  7. Remove chicken from marinade; throw away marinade.
  8. Thread chicken onto skewers.
  9. Place skewers on broiler rack coated with nonstick cooking spray; place rack on broiler pan.
  10. Broil 4 to 5 inches from heat source 4 to 5 min.
  11. Turn skewers; brush with reserved marinade.
  12. Throw away any remaining marinade.
  13. Broil 4 min more or possibly till chicken is no longer pink in center.

  15. Remove chicken from skewers.
  16. Fill pitas with chicken and top with cilantro and dollop of yogurt.
  17. Serving Suggestion : Serve with a fruit salad including pineapple, mandarin oranges and bananas.
