Hoppin Juan Skillet Cakes
- 1 lb. cooked black-eyed peas
- 1 1/2 c. cooked brown rice
- 1 medium onion, finely diced
- 1/4 c. plain, dried bread crumbs
- 1/4 c. Weight Watchers fat-free mayonnaise dressing
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. ground red pepper
- 1 Tbsp. plus 1 tsp. olive oil
- 1 c. picante sauce
- 1/2 c. diced scallions with tops
- 2 Tbsp. plus 2 tsp. Weight Watchers ultimate 90 plain nonfat yogurt
- Preheat oven to 400u0b0.
- Spray baking sheet with nonstick cooking spray.
- In medium bowl, coarsely mash black-eyed peas. Add rice, onion, bread crumbs, mayonnaise dressing, chili powder, cumin and red pepper.
- Divide mixture into 8 (1/3 cup) portions. Shape each portion into a 1/2-inch thick patty.
