Berry Cinnamon Muffins
- 2 cups flour
- 12 cup plus 3 tablespoons white sugar
- 2 teaspoons baking powder
- 12 teaspoon salt
- 14 cup plus 1 tablespoon melted butter
- 1 egg
- 1 egg white
- 1 cup 1% low-fat milk
- 3 tablespoons 1% low-fat milk
- 1 12 teaspoons vanilla
- 34 cup berries
- 14 cup brown sugar
- 14 cup chopped walnuts
- 1 tablespoon flour
- 1 teaspoon cinnamon
- 1 tablespoon butter
- Mix together the flour, all the white sugar, baking powder and salt.
- Set aside.
- Melt the butter (1/4 cup plus 1 T.) and cool a little.
- Add the vanilla to that and mix.
- Mix the egg and egg white together to combine.
- Combine with all the milk.
- Add the milk mix to the butter and wisk to combine.
- For the Filling, mix the brown sugar, flour, cinnamon and cut in the butter, then stir in the nuts.
- Stir the butter/milk mix into the flour mix just until combined.
- Place a large tablespoon of the batter into each of the greased 12 muffin cups.
- Top with 2 teaspoons of the filling mix and 2 to 3 berries.
- Add on the rest of the batter and dust with a teaspoon or so of the remaining filling mix.
- Bake for 20 minutes at 350 degrees.
- Let them cool in the pan for 5 minutes and turn out to cool on a rack.
