Toasted Summer Turkey Sandwich
- 1 small yellow summer squash sliced to 1/4 inch
- 4 slices bread (your choice) I prefer a thinly sliced country white bread
- 1/2 pound deli turkey sliced to deli thin proportion
- 1 tablespoon hot chili peppers I use Durkee Six Pepper Blend
- 2 slices provolone cheese
- 2 tablespoons salad dressing I use Hidden Valley Roasted Onion Parmesan
- 1 medium tomatoes thinly sliced
- If you have a grilling pad on your stove this works perfectly for this recipe, otherwise you can pan grill the squash.
- Prep your grilling station by using Butter Flavored Pam, then sprinkle the surface with the pepper blend (use it all).
- Places your sliced squash in a single layers and grill each side for 5 minutes or until browned to your desired color.
- Remove from grill/pan then place your sliced bread onto your grill and lightly toast in the seasoned pan.
- With seasoned side down preceed to layer your toppings.
- First layer your turkey, then drizzle desired amount of dressing, place your sliced squash, then top with the provolone cheese, then the sliced tomato.
- This recipe is written to make two sandwiches, but a small yellow squash can be enough for several more sandwiches so if you would like to make more adjust the other ingredients accordingly.
