Hawaiian Baked Chicken
- 1/2 c. butter, melted
- 3 whole chicken breasts, split
- 4 chicken legs and thighs (not split)
- salt and pepper
- 1 c. fresh orange juice
- 2 Tbsp. fresh lemon juice
- 1/2 c. brown sugar
- 1 Tbsp. soy sauce
- 1 can sliced pineapple
- 2 fresh papayas, peeled, seeded and sliced
- 2 Tbsp. cornstarch
- In 1/4 cup melted butter, quickly brown the chicken on both sides.
- Place in a single layer in a baking dish.
- Add salt and pepper.
- Brush with remaining butter.
- Bake at 350u0b0 for 40 minutes.
- Meanwhile, combine juices, sugar, soy sauce and cornstarch in a saucepan.
- Cook, stirring constantly, until thick. Stir in fruit.
- Pour sauce over chicken and bake 15 minutes longer, until chicken is tender.
