Cochon's Pickled Peach Relish

• 1 quart peach, pickled
• 3 lemons, zested
• 12 cup mint, torn into small pieces

1. Cut the peaches into medium cubes and toss with chopped lemon zest, mint and a small amount of the pickling liquid.
