AMIEs POLPETTE (meatballs)
- 1 large egg, lightly beaten
- 2 tbsp milk
- 1 cup fresh white breadcrumbs
- 1/4 cup finely grated parmesan
- 1 tbsp finely chopped fresh oregano
- 1 tbsp finely chopped fresh parsley
- 1 clove garlic, finely chopped
- 1 salt and freshly ground pepper
- 500 grams beef mince
- 1/4 cup olive oil
- 1/2 medium size garlic, finely chopped
- Combine the egg, milk and breadcrumbs in a medium bowl and set aside to soak for 5 minutes.
- Then add the parmesan, oregano, parsley, onion and garlic.
- Season with salt and pepper.
- Add the beef and mix thoroughly.
- Shape tablespoonfuls into firm meatballs and place onto a tray.
- Heat the oil in a large frying pan and fry the meatballs in batches fir 3-4 minutes, turning until browned all over and cooked through.
- Serve with your choice of side dishes like my organic green salad, or make a tomatoe sauce and serve with pasta.
- Serves 4.
