Kentucky Cheese Pudding
- 12 cup butter
- 6 tablespoons all-purpose flour
- 3 cups half-and-half
- 12 teaspoon salt
- 14 teaspoon fresh ground black pepper
- 1 12 cups crumbled soda crackers
- 6 hard-boiled eggs, chopped
- 3 cups grated sharp cheddar cheese
- 1 cup drained chopped pimiento
- Preheat oven to 325 degrees.
- In saucepan melt 6 tablespoons butter over moderately low heat, add flour and whisk until mixture is smooth paste.
- Add half-and-half, salt and pepper, continue whisking until sauce thickens.
- Remove from heat.
- Spoon 1/2 cup of sauce into greased 1 1/2 quart casserole.
- Sprinkle a few cracker crumbs over sauce.
- Arrange successive layers of eggs, cheese and pimentos, repeating until all ingredients have been layered, ending with cracker crumbs on top.
- Dot with pieces of remaining butter and bake until bubbling and golden, about 30 minutes.
- Serve hot.
- Yield: 6 servings.
