Colorado Cubano
- 4 hard rolls (kaiser or ciabatta)
- 2 tablespoons Dijon mustard
- 8 ounces sliced swiss cheese
- 8 ounces thinly sliced turkey breast
- 8 ounces thinly sliced smoked ham
- 4 dill pickles, thinly sliced
- 2 tablespoons unsalted butter
- Heat a nonstick griddle, grill pan, or skillet over medium heat.
- Slice the rolls in half, spread with mustard, and then add a layer of the cheese to both sides of each roll.
- Continue building the sandwich by layering the turkey, ham, and pickles on one side of each roll.
- Close the sandwiches.
- Melt the butter on the griddle and add the sandwiches, weighing them down with a heavy skillet.
- Cook for 3 minutes on each side, pressing down occasionally to flatten, until the bread is crisp and the cheese is melted.
- Slice in half and serve immediately.
