Cherry Strata from the Heritage Inn With Cherry Sauce

  1. For Strata, place 8 cups of bread cubes in a greased 9 x 13-inch baking pan.
  2. In a mixing bowl, beat cream cheese, 1/4 cup sugar, and extract until smooth.
  3. Stir in cherries and pecans.
  4. Spoon over bread cubes.
  5. Top with remaining bread cubes.
  6. In bowl, whisk eggs, cream, and remaining sugar; pour over bread.
  7. Bake, uncovered, at 350 degrees for 35 to 40 minutes or until browned.
  8. Let cool 5 minutes and drizzle servings with cherry sauce.
  9. For Cherry Sauce, combine cherries, sugar, and corn syrup in a saucepan; bring to a boil.
  10. Reduce heat and simmer for 15 minutes.
  11. Remove from heat and stir in almond extract.
