Mexican Pasta Dinner
- 8 ounces rainbow pasta
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 -4 ounce diced green chilis
- 1 (15 ounce) can sweet corn, drained
- 1 (15 ounce) can black beans, drained
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (2 1/2 ounce) cansliced black olives
- 12 cup salsa
- 1 tablespoon taco seasoning
- salt & pepper
- Cook Pasta according to package directions.
- Heat Olive Oil, Saute onions.
- Add all remaining ingredients and heat through.
- Toss with cooked pasta and serve.
